I know it's been a week since my first post, but I finally cooked a meal worth writing about this week. I saw Golden Tilefish fillets at the fish counter this week and flashed back to eating at The BoneFish Grill, the only place I'd ever seen it on the menu. I got excited as it's a great meaty fish, somewhat similar to cod and monkfish, but there are very few existing/readily accessible recipes for it. So, I decided it was time to mix and match, taking flavors from similar recipes and making something work.
Now, I get excited when it comes to cooking something new, but sometimes my wife worries a bit, so I promised to make her favorite side dish, which happened to work perfectly with tilefish. So we went with my famous, but simple Roasted Cauliflower. A very healthy side, as long as you remember to take it easy on the olive oil.
