In addition to cooking, I like to bake, which has yet to end tragically. Dayna, my much better half, likes it as well as she gets to bring what's left over to school. (She's a teacher and a damn good one too)
So far, my baking repetoire mostly includes muffins and a dessert bread or two. Tonight, on a random impulse, I found myself making banana nut muffins. Typically I add chocolate chips because who doesn't like it a bit sweeter, but lacking them today, I was pressed into the slightly healthier route.
Josh's Basic Banana Nut Muffins
-1 cup light brown sugar
-1 egg
-2 cups whole wheat flour
-1 teaspoon baking soda
-1/2 teaspoon salt
-3 ripe bananas
-1/2 cup vegetable oil
-1 teaspoon nutmeg
-1.5 teaspoons cinnamon
-1 teaspoon vanilla extract
-Approximately 1/3 cup crushed walnuts
Pre-heat oven to 350 degrees and spray muffin tins with Pam ( or the cheap stuff we accidentally bought)
Mix sugar, oil and egg until smooth, then add banana and walnuts. Mix.
Add salt, baking soda, nutmeg, vanilla extract, cinnamon.
Mix and spoon into greased muffin tins. Lightly sprinkle cinnamon on top before puttin in oven.
Bake for 35 minutes or until toothpick poked in center muffin comes out clean. Makes approximately 18 muffins.
