Dayna's Favorite Pan Seared Tilapia

Let me start by saying that tilapia is one of the easiest types of fish to cook and one of my wife and my favorite seafoods. You can make it a dozen different ways. Bake it, roast it, bread it, fry it, etc. I go with a pan sear. I've been making and refining this dish for about 4 years and Dayna requests it about once a week. Thankfully tilapia is most always on sale. By now, I think my fish guy has our regular order pre-wrapped and waiting.
This recipe's current evolution is a basic sear with diced and sauteed vegetables. Enjoy.

Pan Seared Tilapia and Diced/Sauteed Vegetables
-1 pound tilapia fillets
-1 tomato, diced
-1/2 large shallot, diced
-1 clove garlic, diced
-1 scallion stalk, diced
-flour for dredging
-salt
-pepper
 -olive oil


-Dice tomato, shallot, garlic and scallion. Slice tilapia fillets in half.


-Saute in a tablespoon of olive oil. Keep on low heat as to make sure the veggies don't break down too much.
-Heat one pan turn of olive oil in large pan. Pat dry tilapia and dredge VERY LIGHTLY in flour just cover in light layer for ease in browning. Sear in heated pan for about 4-6 minutes per side at medium high heat until the fish flakes apart easily.
